Protein Easy Grilled Eggplant with Creamy Vegan Sauce
Ingredients
GRILLED EGGPLANT
- 1 large eggplant sliced into medium-thick slices
- 1 clove garlic minced
- 1 jalapeño chopped
- 3 Tbsp BBQ sauce check for vegan options
- 1 tsp minced ginger optional
- 1 splash of lemon juice
- 1 tsp marjoram
- 1 splash of water
Creamy Vegan Sauce
- 1/4 cup cashews soaked if not using a high-speed blender
- 1 block soft tofu organic and non-GMO
- 1 clove garlic
- Lemon juice to taste
- 3 Tbsp nutritional yeast optional
- Salt and pepper to taste
Instructions
Prep the Eggplant
- In a bowl, mix the garlic, jalapeño, BBQ sauce, ginger, lemon juice, marjoram, and water to create the marinade.
- Brush the marinade generously onto both sides of the eggplant slices.
Grill the Eggplant
- Preheat a grill or grill pan over high heat.
- Cook the eggplant slices for 5–7 minutes on each side until tender and slightly charred.
Prepare the Sauce
- In a blender or food processor, combine cashews, tofu, garlic, lemon juice, nutritional yeast, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
